A Burmese Tomato Salad

We recently returned from Myanmar (Burma) and tasted a very unusual, yummy Chinese-style tomato salad. What made it so unique was the addition of chopped peanuts! (You may have already thought of this but it was new to me.) Peanuts are a big crop in Myanmar so it wasn’t surprising that peanuts were added to almost everything (including homemade peanut brittle) but I never would thought of including chopped peanuts in a tomato salad.

The basic recipe consisted of either ripe or green tomatoes, sliced or cut into large chunks, drizzled with whatever Vinagrette or other salad dressing you want, sprinkled with chopped peanuts, and I think, coriander. Very delicious and unique.

One restaurant really pumped up the heat quotient with the addition of little chopped incendiary green peppers. After the first mouthful, I carefully picked through the salad removing these little devils.

This dish was definitely a keeper. Easy, and one that will bring back memories of Myanmar each time I serve it. Enjoy!
