Cook chicken with a good salsa for a tasty dinner. Add salsa to scrambled eggs and omelets. Salsa on peppers (green, red, yellow and orange all work for this and make a great presentation) or healthy crackers is a crunchy snack.

Chicken or ground turkey, salsa, chicken broth and some veggies is a great soup. And this makes a very easy for a quick week-night dinner. You can use black beans, corn, green chilies, green peppers, or onions to add interest and flavor. Fresh garlic and cumin or chili powder work well in this too.
