Here is a recipe for pancakes with diced green chiles. I wouldn’t serve these for breakfast, but I would serve them for bunch or as a side dish at another meal. Try them!
Chile Pancakes
Ingredients
2 eggs, separated
2 tbs flour
1 tsp onion, minced
1 4 ounce can of diced green chiles
salt to taste
dash of Worcestershire sauce
Directions
Beat the egg whites until stiff but not dry. In another bowl beat the egg yolks until thick. Beat the four into the egg yolks. Mix in the chiles, onion, salt and Worcestershire sauce. Fold in the egg whites. Fry like regular pancakes until brown on both sides. Serve warm with butter. Serves 4.
