
Tortillas, instead of bread, are eaten at nearly every meal at Mexican tables. One tortilla has about the same number of calories as a slice of bread. Try your hand at making some fresh tortillas. You can eat them warm with butter, or fill them for burritos, wraps, fajitas or any number of other dishes. Add a dash of chopped green chiles to the dough for some extra flavor.
Flour Tortillas
Ingredients
4 cup All purpose flour
1 1/2 tsp Salt
1 1/2 tsp Baking powder
4 tbs Shortening
1 1/2 cup Warm water
Directions
The directions are similar to making bread dough. Combine the dry ingredients in a mixing bowl. Cut in the shortening. Make a well in the center and add water, a small amount at a time, to form a dough. Knead dough in bowl until soft and stretchy, not sticky. Cover and wet aside for ten minutes. Pinch of dough into egg-sized balls and flatten between your palms. With rolling pin, roll on a floured board into a 6 inch circle, about 1/8 inch thick. Cook on preheated ungreased skillet over medium high heat, about 2 minutes per side, until tortilla looks slightly speckled. Cover with a clean towel to keep warm and soft until served. The tortillas may be cooled and stored in an airtight container or plastic bags in the freezer for later use.
