Mexican Cooking – Fried Plantains

Plantains are a type of banana used for cooking. They are not good eaten raw. They are readily available in most grocery store produce departments. If you can’t find plantains use green-tipped, un-ripe regular bananas.



Fried Plantains — Churros de Platano

Ingredients

3 Plantains

4 eggs

1/4 cup flour

1/2 tsp salt

lemon juice

oil for frying

Directions

Peel the plantain and cut in half lengthwise. Cut each piece in half again and dip in the lemon juice and drain on a plate.

To make the batter: Beat the egg yolks until thick and light. Add flour and salt. Beat egg whites until stiff, not dry, and fold into yolk mixture.

Heat about one inch of oil in a heavy skillet. Drop the plantain pieces into the batter, one at a time. Pick up with a slotted spoon and slide gently into the hot oil. Cook over medium heat, turning almost immediately. Cook until golden brown on both sides. Drain on paper towels. Makes 4-6 servings.
