Here are some recipes for salsa using fruit. Try one of these out for the 4th of July.
Blueberry Salsa
Ingredients
2 cups Blueberries, fresh or frozen
1/2 medium red onion, diced
2 Jalapeno peppers, seeded minced
1 Red bell pepper, diced
3 tbs Fresh cilantro, chopped
1/4 cup Lime juice
1 tsp Kosher salt
Directions
Coarsely chop 1 1/2 cups of the blueberries. In a bowl, combine the chopped blueberries with the whole blueberries and the remaining ingredients. Mix well and chill for at least one hour before serving.
Watermelon Salsa
Ingredients
3 cups Watermelon, chopped
1/2 cup Green bell pepper, chopped
2 tbs Lime juice
2 tbs Fresh cilantro, chopped
1 tbs Green onions, chopped
1 tbs Chopped Jalapeno pepper
1/2 tsp Garlic salt
A dash of hot sauce
Directions
Chop and drain the watermelon in a colander. In a large bowl, combine the watermelon, green bell pepper, lime juice,cilantro, green onions, jalapeno and garlic salt. Mix well, chill for at least one hour before serving.
Pineapple Tomato Salsa
Ingredients
2 medium ripe tomatoes, chopped
1/2 cup pineapple chunks, crushed
1/3 cup green onion, chopped
1/2 cup Jalapeno pepper, chopped
1 1/2 tbs Coriander
1 1/2 tbs lemon juice
1 garlic clove, chopped
1/8 tsp salt
1 tbs vegetable oil
Directions
In a medium bowl, combine chopped tomatoes, crushed pineapple chunks, chopped green onions, chopped jalapeno, and coriander. In a small bowl, combine lemon juice, chopped garlic and salt and whisk in oil. Gently mix the liquid dressing into pineapple and tomato mixture. Chill for at least one hour and serve.
