Mexican Cooking — Spanish Rice

Here is a recipe for Spanish Rice, or Arroz Espanol. This is a nice side dish for all sorts of meals.



Spanish Rice — Arroz Espanol

Ingredients

1/4 cup butter or margarine

1 medium onion, chopped

1 large can of stewed tomatoes (14 oz size)

1/4 tsp ground cumin

1/2 tsp ground red chile

1/8 tsp dried oregano

dash of Worchestershire sauce

salt and pepper to taste

1 cup uncooked rice

2 cups water

Directions

Saute the onion and garlic in the butter until the onion is transparent. Use a pan with a tight-fitting lid because this is the pan you will add the remaining ingredients to and cook the rice in. Do not drain the tomatoes. Add all the remaining ingredients to the pan and bring to a boil. Reduce to a simmer and cover with the lid. Cook for about twenty minutes or until the rice is cooked. Stir occasionally during cooking.
