Swiss chicken enchiladas are made with whipping cream. In Mexico dishes prepared with whipping cream are often referred to as “Swiss.”
Swiss Chicken Enchiladas — Enchiladas Suizas
Ingredients
2 cups cooked chicken, chopped
1 (4 oz.) can chopped green chiles, diced
2 cups whipping cream
1 cup green chile salsa
salt to taste
1 1/2 cups shredded Monterey Jack cheese
12 corn tortillas
2 tbs vegetable oil for frying tortillas
Directions
In a bowl, combine the chicken, diced green chiles, and green chile salsa. In another bowl mix the whipping cream and salt. to fry the tortillas, heat the oil in a skillet to medium high. Fry each tortilla for about 5 seconds in the oil. Remove. It should still be limp so you can roll it. Dip the tortilla in the whipping cream. Fill each tortilla with the chicken mixture. Roll tightly and place, flap-side down in an ungreased baking dish. Pour the remaining cream over the tortillas. Sprinkle with the cheese. Bake uncovered in the oven at 350 degrees for 20 minutes or until heated through and cheese has melted. Serve topped with more green chile salsa if desired.
