The Truth About Red Meat – What’s the Problem with Beef?

Built by Dr. Cheryl Jack, MD on Friday, November 11th, 2005

Almost a day doesn’t go by that I don’t hear some ‘guru’ bashing beef as though it has always been a pariah!

If it had been, you wouldn’t be around because all your ancestors would have long die out.

But they didn’t.

So why the bad rap for beef?

One word: agribusiness.

Today, agribusiness controls farming and ranching on a huge scale. Now “yield” is the mantra of the cattleman. So steers are shot up with growth hormones to make them get bigger faster.

They are also shot up with antibiotics to help them live longer and fight off disease, protecting the cattleman’s investment.

Both of these practices are resulting in problems for you, problems such as:

1) Women are looking more like fat men, carrying weight more in their torso, and subsequently increasing their risk of not only heart disease but cancer – problems which could be due the steroids that are being injected into the steers.

2) Resistant bacteria: this is not just a problem with cattle. We’re seeing that also in people with physician overprescription of antibiotics. So now there’s a parallel in your food. Only it will make you sick!

Very sick.

You are what you eat…and you are what what you eat EATS! Make no mistake about that.

Cattle, cows, steers, whatever you want to call them – they are herbivores; they were meant to eat grass. Today, that just isn’t they case. All sorts of atrocities are happening with the food chain; deliberate atrocities. Cows are being fed a lot of disgusting stuff, such as ground up animal carcasses. This is insanity! (Makes you wonder if this is where Mad Cow came from).

Cows do not possess stomachs that can digest animal byproducts. So they retain the residues, poisons and diseases IN all of this stuff.

And YOU eat it.

Now not all beef is “made” this way…not all beef is tainted (just the majority of what is found in most grocery stores). The beef in my local grocery store smells funny, looks greasy and tastes ‘different’ in a bad sort of way. There is no organic meat in the store. So for me to find organic beef locally takes some doing. I usually order it by mail!

I have a couple of friends who told me they grew their steers organically. I then asked if they shot them up with growth hormone. “Of course,” they said. “You have to do that to get them to grow!” Mistakenly, they thought that all residue from this would ‘wash out’ of the meat by slaughter time.

Fat chance! That’s where the residues concentrate.

So what “is” the problem with beef?

Chemical beef.

Antibiotics in the beef.

Feed given to the beef.

So it isn’t beef that’s bad – it’s the stuff that is being fed and injected into the beef that’s bad…which make eating it bad for you.

Very bad.

One solution is to only buy organic beef. In the east, you can buy from the Amish. In many of the western states, organic beef can be found in your neighborhood grocery store.

And boy is it good!

Or you can join a food co-op and share buying in bulk.

Another option is Bison! Bison do not like to be handled and they are naturally lean. I recommend Montana buffalo and Alberta buffalo as both were mild tasting.

So, yes, you can still enjoy a good organic grassfed prime steak with a clear conscious just as long as you remember this mantra:

“All Cows Eat Grass!”

Pass on the injections please.

Please visit Eco-Eating at www.brook.com/veg for a great alternative!

    2. Shannon says:

I gave up eating beef because of the detrimental environmental effects of supporting a population of cattle- water consumption, methane poo, ruins the land, and sacrifice of America's treasured predators that "threaten" cows. Just not worth it to me or my family.

    3. the Meat Master says:

The meat they serve today is so horribly made. Why can't they just breed animals naturally? It's cheaper to do it that way. Did you know organic farmers have too serve there cows grains not grass! So your much better just going off to a local farm and getting it fresh. Also buy your chicken organic it taste so much better. Organic milk is great no growth hormones so just try to go organic any way you can. Thank you, MEAT MASTER

    4. cc says:

I've cut my meat intake in half and I've increased the amount of veggies and fish: I've lost 14 pounds in half a year, no excercise regime at all and I even eat more bread than before! I never was able to lose weight without feeling hungry. I could say that I've switched to a more chinese-japanese-like cuisine. Also, I've read about people moving to a country where injecting hormones to animals is heavily regulated, like Norway in Scandinavia where chicken you see on the market are much smaller than what I see in my country, and they've lost weight too (norwegians eat bread and potatoes every day).

    5. Doug says:

Shooting up animals with growth hormones, steroids and antibiotics is bad, and we will definitely see effects from that, but saying that all animals are raised this way, or knee deep in filth, is just patently wrong. maybe 'superfarms' do this stuff, but I come from a farming community, and the animals were treated well, almost universally. Think avoiding red meat wil help? fish actually concentrate the contaminates in the water throughout their life cycle, so you get big doses of whatever heavy metals and polution is in its environment.. Tea actually absorbs any pollutants in the soil, and can have high levels of fouride and aluminum.. and flouride is a remarketed industrial waste product, that in small doses is beneficial, but in larger doses is crippling and fatal.. and we are bombarded by it.. Think chicken is safe? Ive been to an egg farm (superfarm) before, when I asked what they did with the dead ones they told me soup companies buy em.. at the time there were 25 dead chickens in a pile at the end of the row of cages they were standing in.. want to talk animal abuse? 3 chickens in a cage so small they couldn't turn around, with a food trough and water trough.. they could eat, drink and lay eggs.. nothing else.. Until we all go back a few centuries and start growing (and butchering) our own foods, we won't know what we are eating. For myself, I'm an omnivore, and choose to eat as I please from the food groups, I have zero pity for that year old steer that died so I could live.. nary a thought in the world for the chicken that lost its head so I could eat.. but I do try to control where it comes from.. deer meat is one of my favorites.. its organically grown :) All this BS about evololving and not eating meats, and implying that I am not evolved because I do.. is just senseless douchebaggery.

    6. Master says:

How humans are not physically created to eat meat Although some historians and anthropologists say that man is historically omnivorous, our anatomical equipment teeth, jaws, and digestive system favors a fleshless diet. The American Dietetic Association notes that "most of mankind for most of human history has lived on vegetarian or near-vegetarian diets." And much of the world still lives that way. Even on most industrialized countries, the love affair with meat is less than a hundred years old. It started with the refrigerator car and the twentieth-century consumer society. But even with the twentieth century, man's body hasn't adapted to eating meat. The prominent Swedish scientist Karl von Linne states, "Man's structure, external and internal, compared with that of the other animals, shows that fruit and succulent vegetables constitute his natural food." The chart below compares the anatomy of man with that of carnivorous and herbivorous animals. When you look at the comparison between herbivores and humans, we compare much more closely to herbivores than meat eating animals. Humans are clearly not designed to digest and ingest meat. Meat-eaters: have clawsHerbivores: no claws Humans: no claws Meat-eaters: have no skin pores and perspire through the tongueHerbivores: perspire through skin poresHumans: perspire through skin pores Meat-eaters: have sharp front teeth for tearing, with no flat molar teeth for grindingHerbivores: no sharp front teeth, but flat rear molars for grindingHumans: no sharp front teeth, but flat rear molars for grinding Meat-eaters: have intestinal tract that is only 3 times their body length so that rapidly decaying meat can pass through quicklyHerbivores: have intestinal tract 10-12 times their body length.Humans: have intestinal tract 10-12 times their body length. Meat-eaters: have strong hydrochloric acid in stomach to digest meatHerbivores: have stomach acid that is 20 times weaker than that of a meat-eaterHumans: have stomach acid that is 20 times weaker than that of a meat-eater Meat-eaters: salivary glands in mouth not needed to pre-digest grains and fruits.Herbivores: well-developed salivary glands which are necessary to pre-digest grains and fruitsHumans: well-developed salivary glands, which are necessary to pre-digest, grains and fruits Meat-eaters: have acid saliva with no enzyme ptyalin to pre-digest grainsHerbivores: have alkaline saliva with ptyalin to pre-digest grainsHumans: have alkaline saliva with ptyalin to pre-digest grainsBased on a chart by A.D. Andrews, Fit Food for Men, (Chicago: American Hygiene Society, 1970) Clearly if humans were meant to eat meat we wouldn't have so many crucial ingestive/digestive similarities with animals that are herbivores. Many people ask me, "If we weren't supposed to eat meat than why do we?". It is because we are conditioned to eat meat. Also, the ADA (American Dietetic Association) tells us that "most of mankind for most of human history has lived on a vegetarian or Lacto-ovo vegetarian diet. A popular statement that meat eaters say is; "In the wild, animals kill other animals for food. It's nature." First of all, we are not in the wild. Secondly, we can easily live without eating meat and killing, not to mention we'd be healthier. And finally, as I have already shown, we weren't meant to eat meat. Meat and seafood putrefies within 4 hours after consumption and the remnants cling to the walls of the stomach and intestines for 3-4 days or longer than if a person is constipated. Furthermore, the reaction of saliva in humans is more alkaline, whereas in the case of flesh-eating or preying animals, it is clearly acidic. The alkaline saliva does not act properly on meat. The final point I would like to make on how we as humans were not meant to eat meat is this. All omnivorous and carnivorous animals eat their meat raw. When a lion kills an herbivore for food, it tears right into the stomach area to eat the organs that are filled with blood (nutrients). While eating the stomach, liver, intestine, etc., the lion laps the blood in the process of eating the dead animals flesh. Even bears that are omnivores eat salmon raw. However, eating raw or bloody meat disgust us as humans. Therefore, we must cook it and season it to buffer the taste of flesh. If a deer is burned in a forest fire, a carnivorous animal will NOT eat its flesh. Even circus lions have to be feed raw meat so that they will not starve to death. If humans were truly meant to eat meat, then we would eat all of our meat raw and bloody. The thought of eating such meat makes one’s stomach turn. This is my point on how we as humans are conditioned to believe that animal flesh is good for us and that we were meant to consume it for survival and health purposes. If we are true carnivores or omnivores, cooking our meat and seasoning it with salt, ketchup, or tabasco sauce would disguise and we as humans would refuse to eat our meat in this form. Overall advantages of vegetarianismYou can indeed reap a lot of benefits by being a vegetarian and people have become more aware of the health benefits of being a vegetarian. Animal rights issues is only one of the reasons why people decide to go on a vegetarian diet. People are beginning to care more about the environment. However, the main reason why people go on vegetarian diet is because of health benefits. Meat is not good for you as it clogs your thinking. This is especially true if you eat red meat; white meat has less fat compared to red meat. Excessive intake of fats into your body can result in having a high level of cholesterol. If you think that not eating meat is going to make you look scrawny or unhealthy please think again. Just imagine that cows, goats, gorillas, elephants, rhinoceroses and so on are all vegetarians (herbivores) but look at how tough these animals are, not to mention their life span which is longer compared to the carnivores (meat eating animals). If you look at the chicken and vulture (carnivores), these animals eat just about everything and notice how unhealthy these animals look. The Chinese believe that the chi or life force in your body is less when you consume meat and so do the Indians with their ancient yogic principles, their life force was called prana. The great Tai Chi masters of China were adept at preserving their chi, even if some of the masters were not vegetarians, they still had a balanced diet. It has now been scientifically proven that a balanced vegetarian diet is better compared to a diet that is taken with meat. There are a lot of misconceptions about being a vegetarian; protein is one of the main topics of debate as a lot of people think that you can only get protein from meat. Vegetarians get a lot of protein, if they eat a variety of fruits, vegetables, grains and legumes. What vegetarians don't get is the excess protein of traditional American diet, excess that leads to kidney overload and mineral deficiency diseases. A lot of people also think that a vegetarian diet is not a balanced diet. Vegetarian diets have a proportion of three macronutrients, which are complex carbohydrates, protein, and fat. Vegetarian food sources (plants) tend to be higher sources of most micronutrients. Another myth that needs to be clarified is the so-called lack of calcium among vegetarians. Many vegetables, especially green, leafy ones, have a good supply of calcium. The truth is that vegetarians suffer less from osteoporosis (a deficiency of calcium that leads to weak bones). It is not my intention to force people to become vegetarians. However, vegetarianism is my answer to complete health and wholeness. The three issues to consider in regard to vegetarianism are: spiritual, mental, and physical (nutritional). The spiritually aspiring person attempts to work on his/her self. The purpose of spiritual growth is to move away from the animal nature into the more human nature that God intended for us to have. Meat eating inhibits this. Again, the same science that sometimes attempts to ignore the existence of a force higher than man also has proved, in the laboratory, that aggression levels are much higher in meat eaters than non-meat eaters! The animal instincts become more powerful every time you eat meat. Another spiritual aspect of being a meat eater is when one must question the necessity and the method as well as the karma of killing animals. However, everyone has their own mores which they must determine for themselves. It is not the purpose of my dissertation to force a specific moral behavior on anyone. Most spiritual people believe auras. Kirilian photography shows us that a force field remains around dead or amputated tissue. You adopt that animal aura when you eat a dead animal. Fruits and vegetables have a higher vibrational aura than animal products. Is it not personal evolution that the spiritual candidate is interested in? If so, meat eating is urgently prohibited. “You are what you eat”, is a slogan that I love to use to show the mental aspect of vegetarianism. When animals are slaughtered, fear and aggression enzymes are shot into their cells from their glands and other organs, just as in humans, and are part of the dead carcass that goes on to the food store. They remain in the meat until the consumer ingests those same enzymes, which are molecularly very similar to those found in humans. Fruits and vegetables do not have emotions; therefore, when they are picked they do not release any emotions cells prior to digestion. The enzymes within fruits and vegetables supply the body with sufficient nutrients that will always uphold a healthy state of mind. Fruits and vegetables are high in nutrients; the very thing the body needs to live a long disease and pain free life. The same cannot be said for meat. Nutritionally, the alkaline-based digestive system of humans will not properly break down substantial acid substances, the greatest of which is meat. Colon cancer is rampant! This is caused by the slow evacuation and the putrefaction in the colon of the remains of meat. Lifelong vegetarians never suffer from such an illness. Many meat eaters believe that meat is the sole source of protein. However, the quality of this protein is so poor that little of it can ever be utilized by humans because it is incomplete and lacks the correct combination of amino acids, the building blocks of protein. Studies show that the average American gets five times the amount of protein needed. It is a common medical fact that excess protein is dangerous, the prime danger being that uric acid (the waste product produced in the process of digesting protein) attacks the kidneys, breaking down the kidney cells called nephrons. This condition is called nephritis; the prime cause of it is overburdening the kidneys. More usable protein is found in one tablespoon of tofu or soybeans than the average serving of meat! Have you ever seen what happens to a piece of meat that stays in the sun for three days? Meat can stay in the warmth of the intestine for at least four days until it is digested. It does nothing but wait for passage. Often, it usually stays there for much longer, traces remaining for up to several months. Colonic therapists always see meat passing through in people who have been vegetarians for several years, thus indicating that meat remains undigested there for a long time. Occasionally this has been documented in twenty-year vegetarians! Some vegetarians claim they are more satisfied after they eat. The reason for this is that there are fewer ketones (protein-digestive substances) formed when vegetable protein is digested. For many, ketones cause a trace amount of nausea which one normally interprets as a decreased desire for food due to this uncomfortable and slight degree of queasiness. Although the body calls for more food, the taste buds tolerate less. This is the danger of the popular high-protein diet substances on the market. This abnormally high level of ketones is called ketosis and refers to the state of starvation that the body incurs due to the inability of the appetite to call for nutrition. Most Americans who eat the wrong type of carbohydrates never recognize the high amount of complex carbohydrates required to overthrow this condition. Also, when the blood ketone level is too high, it results in abnormally acidic blood, called acidosis. Tigers or lions who eat meat and grow strong on it have acid-based digestive systems. Our Hydrochloric Acid isn’t strong enough to fully digest meat. Also, their intestines are in a straight run of about five feet long, not twisted and turned, layer over layer, compacted into a small area like the human intestine, which is twenty feet long. Meats are frozen for a long period of times. Some meat (especially poultry) is frozen up to two years. Cold temperatures do not kill all species of bacteria. Worse than this, as it is shipped and stored, most frozen meat is thawed and refrozen many times. This is almost unavoidable. Meat eaters suffer more frequently from various types of food poisoning than vegetarian eaters, so much so that statistics show that every American has had food poisoning on at least one occasion. When you've felt ill, out-of-sorts, had diarrhea, or were just a little sick to your stomach, no doubt you had not the slightest idea that you had been poisoned by scavengers living off the dead carcass you just ate. Meat is costly and it is the most wasteful source of resources. When one removes meat from his or her diet, a whole new world of eating opens up. Cooking and preparing vegetarian style is no more time consuming than cooking meat. It costs less than half as much to eat vegetarian as it does to eat meat. There are excellent, nutritious, and easy to prepare vegetarian dishes that are Italian, Chinese, Indian, Mid-Eastern, French, Spanish, etc. Additionally, one can enjoy many other foods that he has never tasted because of the meat craze. Most consumers have eaten no more than five or six varieties of beans and legumes — less than 10% of what is available and grains, including different appetizing types of wheat, nuts, and seeds. And they can be prepared very creatively! In my opinion, there are far more benefits to becoming a vegetarian then there are becoming or staying a meat eater. Due to the fact that I was raised on meat, I have the wonderful experiences from both worlds. As a meat eater, I was constantly sick, tired, and overweight. As a vegetarian, I am healthy, full of energy, and maintaining a perfect weight. I love being a vegetarian and it shows. Because I wish the best for myself, it’s just second nature to want the best for others. From my past experience and research, going vegetarian is the best thing anyone can do for their mind, body and spirit. BACK TO HEALTH TIPS BACK TO HOME PAGE

      • Lee says:

This is total bunk. There are still many extant bush cultures around the world and not one of them lives off a vegetarian diet (please name one you know of that does not eat any animals). Many animals in the animal kingdom, including humans, cross over at some point from carnivore to herbivore and vice versa. The panda is a bear with canines and no digestive system for plants, yet it lives on bamboo. The duker is hoofed herbivore that is known to actively hunt small mammals and will eat carrion. One the biggest differences between us and chimps is that our digestive system is a lot shorter specifically because we evolved to digest a much richer source of food, i.e. animal fat and protein and relied less on plant foods that require a longer digestive tract. Just because we don't have huge canines doesn't mean jack, although you will notice that we DO have them, unlike the vast majority of herbivores. If there is one thing that is NOT natural in our diet it is grains. They are indigestible or even poisonous unless they are heavily processed. Why do you think diabetes and obesity is on the rise while people are eating less saturated fats and more carbs? I'll tell you, it is the carbs. Our natural diet, which you will see in just about any extant bush culture is meat, eggs, vegetables, fruits, and nuts. There was a recent mummy find in Egypt which surprised many scientists. They knew ancient Egypt was a grain based society, so they assumed they must have been healthy. But they noted many similar maladies to what is common today, evidence of diabetes, tooth decay, etc....Most of the vegetarians I know look terrible because they get insufficient protein in their diet. And I notice how they all respond when they smell a BBQ going. They savor the air. Notice that many of the vegetarian foods are made to resemble meat products? Soy bacon, veggie burgers, tofu dogs, etc...? Wonder why that is? Saying that meat based diets do not leave you satisifed is scandalous. I no longer get any hunger cravings since dropping the all mighty grain based diet. I dropped about 30 lbs inside 2 months and all my blood metrics greatly improved. All with a diet that is 50-60% fat (including a lot of animal fat), only about 5% carbs and the rest protein. And truth be told, vegetarian grain based agriculture is worse on the land than a free range rotating pasture operation. Do you think lots of cute little animals are living peacefully in the corn fields? When the tractor digs the whole thing up each season? And sprays herbicides and pesticides all over it? The vegetarian argument is not health advice. It is a self-loathing political ideology where animals are above humans and they can't stand to think of Charlie the chicken being sacrificed to feed people. But welcome to the animal kingdom. By the way I am an animal lover and volunteer in animal welfare, but I take my place in the circle of life as the omnivore I am supposed to be and I eat what our ancestors ate before the agricultural revolution. I eat what we ate for millions of years because I figure mother nature knows best. The millstone may have gotten us through some famines but it forever eroded our health. And it is responsible for the gross over population of the world, lots of extra cheap empty calories.

I've been a beef farmer for the past 15 years. More so, milking/raising beef has been in my family for the past three generations. I know a thing or to about cows. The statement that the author made "Cows are being fed a lot of disgusting stuff, such as ground up animal carcasse" is COMPLETELY false. Cows are herbivores, the author agrees with that. Being a herbivore means that you DON'T eat meat, not that you don't have access to meat. If a cow's trough has a dead body in it, they will stay clear of the thing, most likely not even touching the food. They would rather go hungry than to eat meat. His last statement "all cows eat grass" is true, but not complete. Cows do eat grass, but they eat it in the form of hay (dry grass), ensilage (fermented grass), and also grain. This combination of food types is just like humans: we can't survive on just one type of food, hence the food pyramid. If a human were eating only vegetables for his or her entire life, the person would be terrible malnutritioned. The same is true for cows. Variety is the key.As an ending note, if you want the leanest beef, find a farmer who milks his cows. Ask him if you can buy beef from his cows. Holsteins have barely any fat on them. Since they're raised for milk, not meat, it's not top priority to make them huge. The fattest Holsteins, I can promise, will have less fat than the leanest beef you can buy from a store.

Not only is it disgusting what they feed the cows its also horrible the way they are raised knee deep in there own filth there whole lives. they\re miserable and that alone made me never want to eat beef or another animal again. Hey um Emma SHUT THE HELL UP U GRASS EATING HIPPY!!humans by the right of nature have the right to have control any animal that can be tamed, harvested from, or have any benifical value. If ur ancestores didnt eat meat then u wouldnt be alive red meat from cows or any animal in general increases brain size without it we would only have 1/4 the brain size we do now, so next time u see meat at the grocery store think, the animal isnt suffering its in its natural enviroment and it would be a waist not to harvest its meat.

        • Bes says:

Okay Mr. Skylar, The only reason your so against the whole idea of not eating cows is because this is probably what you only know. If people don't eat your meat then you ARE OUT OF BUSINESS! You should really be open minded and look at all aspects. Are you a doctor, probably not considering your vocabulary. Are you God? Did you come down to earth and tell everyone that animals are only here for human satisfaction, no. It's what's been imbedded in your mind. The only reason our ancestors killed for food was because they were not as evolved as our society is now. We have taught ourselves to sustain on grains and plants, not just meat. Plus we are a fatter society because of the meat we eat today.

Your article was very convincing. I don't eat red meat either, i actually stopped eating it because i didn't like the taste, but then i found about more about all the diseases and concerns connected with red meat. A lot of people are inclined to argue that history shows generations of carnivorous meat-eaters have consumed meat and steered clear of all the current health issues associated with red meat, but historic generations weren't eating the kind of meat that is sold at supermarket chains and most butchers now.I think even if you do buy organic beef, it's too hard to be sure that it is safe, and i think i'd rather never eat a steak again than have to worry about colon cancer or mad cow disease - seafood is just as tasty.

    13. Nancy J. says:

As much as I love beef, and bought organic, I still had to give it up. All forms including extracts. As a result, I've currently lost 50 pounds in 7 months and my digestive system is better. If I eat beef or lamb, I suffer from cramps and diahrrea for about three days. For people who can eat beef, more power to you. But I am trying to find out why I have such adverse reactions. If anyone has info, please let me know.Thank You

I raise Epicuristic "milk fed, grass fed, pastured and pampered" southern veal here in GA. I couldn't agree more with what the good Dr. said. The big guys, including now the big super market chains and Wal-Mart are trying desperately to dilute, (1) the overall organic effort (2)trying thru all types of "health inspection rules and regs" to reduce and or make buying locally such a headache, people just give up. But to the people that don't give up, it is really great to hear back from them how really good the meat is, and how great it is to buy locally from someone you know and trust. Thanx for letting me comment.
